Asparagus recipes for school meals?

Good morning school food service directors,

I hope you enjoyed a well-deserved and restful spring break!

 

We’re gearing up to celebrate National Asparagus Month in May with Michigan asparagus on school lunch trays (hoping the weather will cooperate, of course)! Have you previously served asparagus in your school meals program? If so, do you have a well-received recipe that you’d like to share? Please pass on your recipes, preferably in quantities appropriate for food service scale, to me in the coming week if you can. I’d like to compile and share them (giving credit to those who came up with the recipes, of course) with schools around the state before Asparagus Month rolls around!
